We were once told that breakfast was the most important meal of the day, breakfast like a King, lunch like a Prince and dinner like a Pauper. We are now currently bombarded with fasting theories, with breakfast being sacrificed and skipped. Whatever your breakfast philosophy we think this Granola can be enjoyed anytime of the day. At WearActive, our current theory is why would you restrict breakfast foods to just the morning time?
This recipe for our buckwheat granola is so good because you can prepare it one day and eat it every other day when it’s kept in an airtight container. If you don’t forget about the timer on your oven and burn it, which we have done, so hopefully with our recipe instructions that wont be the case anymore? It's so easy to make and so addictive to snack on. Also, buckwheat granola is a way of getting these outstandingly healthy grain-like seeds in your body, so their energy can support you all day. Did you know buckwheat contains a good amount of plant-based protein, in fact it delivers all of the eight essential amino acids, including lysine, which is usually lacking in grains and tryptophan which acts as a precursor to the feel-good hormone serotonin. Preheat the oven to 150°C and line a baking tray with baking paper or a silicon mat. Combine all the dry ingredients in a large bowl. In a seperate bowl mix all the wet ingredients together and then combine the wet and the dry until everything is well coated. Spread the mixture onto the baking tray and bake for 20 minutes. After 20 minutes, remove from the oven and give it a good mix before baking for a further 20 minutes until golden brown. Allow to cool completely and the granola will harden and get crunchy once it is cold.
This recipe is also gluten free. Buckwheat, even though its confusingly has wheat in its name, is without gluten. This makes it a great option for cooking, baking and our breakfast granola. We prefer to also eat our granola with an oat milk. There are many plant based milk options but we believe that oat milk is easier to make ourselves, sustainable, healthy as well as tasty!
